Chef De Cuisine Mauro Panebianco to Headline Celebrity Chef Residency at Sun Siyam Iru Veli, Maldives this November.

Male, 03rd August, 2022: As part of the resorts’ ongoing exclusive celebrity chef residencies, Sun Siyam Iru Veli, Maldives welcomes Chef De Cuisine Mauro Panebianco – Head Chef at Moscow’s famous Cantinetta Antinori restaurant to its culinary shores this November.

Guests at Sun Siyam Iru Veli will be able to indulge in a from Chef Mauro especially designed and exclusively hosted dinner set-menu at all-time favorite Mediterranean-themed overwater restaurant ROMA on the 2nd and 3rd of November, 2022.

His signature dishes include taste bud treats such as; Blue Shrimp Ceviche served with Raspberries and Avocado, Beef Tartare with Aioli Sauce and Black Truffle or Braised Beef Cheek with Pumpkin Confit, Madeira and Morel Mushroom Sauce. Each course is complemented by wine pairings, selected from Sun Siyam Iru Veli’s extensive cellar by the resort’s in-house sommelier.

Chef Mauro will also present his incredible cuisine at an exceptional management cocktail by the beach where all island foodies can sample his elegant but simply-tasty Italian dishes while gazing into the sunset.

Born in Busto Arsizio, a city in northern Italy, Chef Mauro spent his early years at his uncle’s restaurant where he fell in love with the world of cuisine. Deciding he wanted to become a chef early on, he enrolled and studied at the Institute of Hotel Management in Stresa, one of Europe’s most famous hotel schools, mastering his craft in various restaurants, before graduating from the institute with extremely promising grades.

Mauro Panebianco quickly rose to fame after starting work at a Swiss hotel in Milan, which quickly garnered a reputation for serving exceptional Italian cuisine. He later opened a restaurant in Munich, which also became wildly popular. Not long after, he was headhunted and coaxed to pack his knives and leave to open a bold new restaurant in Russia, beginning a decade-long journey. Cantinetta Antinori is a prestigious joint project established by restaurant-industry giant, Arkady Novikov and the Italian wine house Antinori; a fine dining experience set in a beautiful 700-year-old mansion, where Mauro Panebianco has served as chef de cuisine at Cantinetta Antinori since it opened in 2004.
